This simple, homemade yogurt is a healthier alternative for a hot summer day.

 

At almost 2 years old, my daughter learned a new phrase: “Ice cream truck!” We had just moved into a new home, and little did we know that we were apparently on the daily route for the neighborhood ice cream truck. When we were out playing in the backyard, we could hear its telltale music approaching, and my little lady excitedly said, “Ice cream truck! Ice cream truck!”

While I didn’t mind letting her have an occasional treat from the truck, I far preferred giving her something a little bit healthier, and a little bit more homemade. And that is how I stumbled across this recipe for Banana-Peanut Butter Frozen Yogurt. It combines three of her favorite foods simply and quickly to make a delicious, satisfying, hot weather treat.

While this is just as scrumptious and creamy as store-bought ice cream, it’s healthier and more natural than many of the ice cream truck’s options, and super simple to make, with a mere three ingredients. It’s wonderfully balanced, with richness from the peanut butter, a tart bite from the Greek yogurt and natural sweetness from the bananas. The three ingredients are all familiar enough to my daughter that the homemade frozen yogurt was an instant hit with her. At the same time, they’re complex enough together that this isn’t merely “kid food” — it’s appealing to adults, too. Family friendly recipe: Banana-Peanut Butter Frozen Yogurt

Ingredients
  • 3 ripe bananas, cut into 1-inch pieces
  • 1/2 cup 2% Greek yogurt
  • 1/4 cup peanut butter*
Instructions
  1. Put the banana pieces in the freezer until frozen.
  2. Put the frozen bananas in a blender and puree. Add the yogurt and peanut butter, then puree until smooth. Transfer the contents to a freezer-safe bowl. Return the contents to the freezer and freeze until ready to scoop. Frozen yogurt may have to sit out at room temperature for five minutes or so for easier scooping. Serve cold.

If peanut butter is a no-go in your household due to allergies, there are good substitutes: almond butter, sunflower seed butter or cashew butter.
