Recipe: Holiday Pumpkin Parfait

by Two pumpkin parfait desserts in glasses

Holiday desserts don’t have to be fattening. This pumpkin parfait is much lighter than pie.

When you want a seasonal dessert that looks pretty, pumpkin puree gets the job done — and it’s one of the healthiest baking ingredients you could ask for.

This easy pumpkin parfait recipe, perfect for Thanksgiving and Christmas, relies on many of the same delicious flavors as heavier pies and cakes. But with nonfat milk, sugar-free pudding mix and a modest serving size, you won’t waddle away from the family table feeling guilty that you over-indulged. These adorable cups are easy to whip together several hours before a family gathering, then chill in the refrigerator.
