Recipe: Cool down with a cucumber and tomato salad

This fresh and easy cucumber and tomato salad is the ideal dish for hot days. Best of all, it’s delicious.

 

It’s that time of year. Vines are heavy with tomatoes, and cucumbers are coming in waves. Here’s one idea for how to use your garden’s bounty.

 

Cucumber and Tomato Salad

Makes 4 servings

Tomato and cucumber salad

Ingredients:

1 cup cherry tomatoes, halved
3 cucumbers, peeled and diced
½ cup red onion, diced
¼ cup feta cheese, crumbled
¼ cup red wine vinegar
2 tablespoons olive oil
1 teaspoon black pepper
1 teaspoon salt

 

Instructions:

1. Place tomatoes, cucumbers, red onion and feta cheese into a large bowl.

 

2. Whisk together vinegar, olive oil, pepper and salt.

 

3. Pour over other ingredients and mix.

 

4. Chill for at least 30 minutes and serve.
