Recipe: Cool down with a cucumber and tomato salad

This fresh and easy salad is the ideal dish for hot days. Best of all, it’s delicious

 

 

Cucumber and Tomato Salad

Makes 4 servings

 

Ingredients:

1 cup cherry tomatoes, halved
3 cucumbers, peeled and diced
½ cup red onion, diced
¼ cup feta cheese, crumbled
¼ cup red wine vinegar
2 tablespoons olive oil
1 teaspoon black pepper
1 teaspoon salt

 

Instructions:

1. Place tomatoes, cucumbers, red onion and feta cheese into a large bowl.

2. Whisk together vinegar, olive oil, pepper and salt.

3. Pour over other ingredients and mix.

4. Chill for at least 30 minutes and serve.
