Take advantage of fresh farmers market corn for a seasonal favorite. Try this grilled steak salad with corn for a quick weeknight dinner

Meat-lovers can enjoy a satisfying dinner from the grill without sabotaging a healthy diet. Beef in moderate portions can be a welcome break from leaner protein such as chicken or turkey. When a health-conscious carnivore craves some steak, this strip steak recipe, paired with a salad made from freshly grilled corn, offers a fast, simple summer meal that serves 4.

Recipe: Summer grilled steak with corn salad

Serves: 4 servings
Ingredients
  • Marinade
  • 1 tablespoon minced garlic
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • 2 boneless strip steaks, trimmed
  • Corn Salad
  • 5 large ears corn, husked
  • 2 medium tomatoes, chopped
  • 1 small red bell pepper, diced
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons red wine vinegar
Instructions
  1. Preheat grill to high.
  2. Combine garlic, oil and salt in a small bowl. Rub the mixture on both sides of steaks.
  3. Place the steaks and corn on the grill. Grill steaks to preferred doneness, about 5-6 minutes for medium. Remove steaks from grill and let rest while corn finishes cooking for about 2-3 more minutes.
  4. Once the corn is cool, remove kernels from the cob. Combine the corn, tomatoes, bell pepper, oil, salt, basil and vinegar in a bowl.
  5. Slice the steaks and serve with the corn salad.
