Recipe: Summer grilled steak salad with corn


Take advantage of fresh farmers market corn for a seasonal favorite. Try this grilled steak salad with corn for a quick weeknight dinner


Grilled Steak Salad with Fresh Corn

Total Time: 40 minutes




1 tablespoon minced garlic
1 teaspoon olive oil
¼ teaspoon salt
2 boneless strip steaks, trimmed


Corn Salad

5 large ears corn, husked
2 medium tomatoes, chopped
1 small red bell pepper, diced
2 teaspoons olive oil
¼ teaspoon salt
2 tablespoons chopped fresh basil
2 tablespoons red wine vinegar



Preheat grill to high.

Combine garlic, oil and salt in a small bowl. Rub the mixture on both sides of steaks.

Place the steaks and corn on the grill. Grill steaks to preferred doneness, about 5-6 minutes for medium. Remove steaks from grill and let rest while corn finishes cooking for about 2-3 more minutes.

Once the corn is cool, remove kernels from the cob. Combine the corn, tomatoes, bell pepper, oil, salt, basil and vinegar in a bowl.

Slice the steaks and serve with the corn salad.
