Learn how to cook collard greens with Canadian bacon for a flavorful, healthier version of a Southern classic.

 

Collard greens are a Southern favorite, but despite the fact that they’re leafy greens, they are often prepared in a less-than-healthy way. If you enjoy traditional greens and are trying to eat with health in mind, you will love this recipe. It has 300 calories fewer per serving than a traditional collard green recipe! And while it is low in calories and fat, it is high in fiber and protein, nutrients that keep you feeling satisfied for many hours.

The key to this recipe is the Canadian bacon and the spices, which give the greens plenty of flavor without all the fat. Maple syrup gives them a hint of sweetness.

 

Ingredients to cook collard greens

Ingredients

1-1/4 pounds collard greens

1 tablespoon water

2 slices Canadian bacon

1 tablespoon olive oil

1 small onion, chopped

1 tablespoon cider vinegar

1 tablespoon maple syrup

1/8 teaspoon hot red pepper flakes

3/4 cup low-sodium chicken broth

Salt to taste

 

Instructions

Remove the stems and center ribs from the collard greens and discard.

Cut the leaves into 1/2-inch strips.

Place the greens into a large microwave-safe bowl with water and cover tightly. Microwave on high for 5 minutes.

Preheat a large skillet and cook the Canadian bacon for 2 minutes on each side. Remove it from the pan, chop and set aside.

Add the oil and onion to the pan and cook until the onions have softened, about 2 minutes.

Add the collard greens and stir in the vinegar, maple syrup, red pepper flakes and broth. Bring to a simmer and cook, covered, for 30 minutes.

Add the chopped bacon to the pan and season with salt, if desired.
