Serves: 3 mushroom pizzas
This pizza recipe uses portabella mushroom in place of crust, to cut calories and boost flavor.
  • 3 large portabella mushrooms
  • ½ cup low-sodium tomato sauce
  • 3 ounces low-fat mozzarella cheese
  • 3 cloves garlic, minced
  • 6 cherry tomatoes, halved
  • 1 teaspoon balsamic vinegar
  • Pepper, to taste
  1. Preheat oven to 400 degrees F.
  2. Remove stems and dirt from the mushrooms.
  3. In a baking dish, evenly stuff the insides of the mushrooms first with tomato sauce, then with mozzarella cheese, garlic, cherry tomatoes and balsamic vinegar.
  4. Bake at 400 degrees for 20 minutes.
  5. Sprinkle with pepper, to taste.
