Recipe: Soft-baked Ginger Cookies

These soft, chewy cookies are slimmed down, low in fat, low in calories (compared with other cookies) and a satisfying treat during the holidays.
  • 1-1/4 cup white whole-wheat flour
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ΒΌ cup molasses
  • 5 tablespoons honey
  1. Whisk together the flour, baking powder, ginger, cinnamon and salt in a medium bowl.
  2. In a separate bowl, whisk together the butter, egg and vanilla.
  3. Stir in the molasses and honey.
  4. Add in the flour mixture, stirring until incorporated.
  5. Chill the cookie dough for 30 minutes, or up to 2 hours. If chilling longer than 2 hours, cover the cookie dough with plastic wrap.
  6. Preheat the oven to 325 degrees, and line a baking sheet with parchment paper or a silicone baking mat.
  7. Drop the cookie dough into 15 rounded scoops onto the prepared baking sheet.
  8. Bake at 325 degrees for 12 to 15 minutes.
  9. Cool on the pan for at least 10 minutes before transferring to a wire rack.
