Serves: 4 1-cup servings
  • 1 cup lemon juice
  • 1 bunch kale, cut into bite-sized pieces
  • ¼ cup olive oil
  • 2 teaspoons honey
  • ¼ teaspoon ground black pepper
  • 1 medium-sized apple, thinly sliced
  • ¼ cup roasted walnuts (optional)
  1. In a bowl, combine half of the lemon juice and kale with a drizzle of olive oil.
  2. Massage the kale until it starts to soften and wilt, about 2 - 3 minutes.
  3. In a small bowl, mix the remaining lemon juice with the honey and ground pepper.
  4. Add ¼ cup of olive oil while whisking until dressing forms.
  5. Pour the dressing over the kale. Toss to coat.
  6. Top with sliced apples and walnuts (walnuts are optional).
