Recipe: Angel Food Cake with Fruit Salsa

Serves: 12 servings
  • 1 cup strawberries, cut into bite-sized pieces
  • 1 cup pineapple, cut into bite sizes
  • 3 kiwis, peeled and diced
  • 2 mangoes, peeled and diced
  • 1 tablespoon lime juice, fresh
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 angel food cake, ready-made or homemade
  1. Place all the chopped fruit into a large mixing bowl.
  2. In a small bowl, combine the lime juice, sugar and cinnamon.
  3. Pour the lime juice mixture over the chopped fruit. Stir gently so the lime juice mixture coats the fruit evenly.
  4. Chill in the refrigerator, if time allows.
  5. Cut the angel food cake into 12 slices.
  6. Spoon 2 tablespoons of fruit mixture over slices of angel food cake.
