Recipe: Beef, Broccoli and Brown Gravy With Rice

Serves: 6 servings
  • 1 ½ pounds ground beef (93% lean or leaner)
  • 2 tablespoons olive oil
  • 2 cups brown rice
  • 4 cups frozen broccoli
  • 1 ½ packets low-sodium brown gravy
  • 2 cups water
  1. Heat up large skillet with 2 tablespoons of olive oil. Once skillet is warm, place ground beef on skillet. Break meat into smaller pieces. Stir occasionally.
  2. Cook brown rice and set aside to cool.
  3. Once meat is browned, add 1 ½ packets of low-sodium gravy with 2 cups of water. Let mixture simmer for about 5 minutes.
  4. After 5 minutes, add one bag of frozen broccoli to mixture. Once broccoli is soft and bright green in color, set mixture aside.
  5. Place brown rice on a plate and pour mixture on top. Enjoy!
